The job of Chef de Partie is successfully executed when:



  • Ceviches, tiraditos, tartares, causas, and other Nikkei cold kitchen preparations are prepared and presented in accordance with the restaurant’s recipes, standards, and quality requirements.
  • Proper handling, storage, and stock rotation of fish, seafood, and other fresh products are ensured, maintaining the highest standards of quality and food safety.
  • Health, hygiene, and food safety regulations (HACCP) are strictly followed.
  • Energy-saving, resource optimization, and waste recycling policies are consistently applied.
  • Effective communication is maintained with other kitchen sections, the front-of-house team, and management to ensure an exceptional guest experience.
