_GENERAL STATEMENT OF DUTIES AND RESPONSIBILITIES:_ Cooks, serves food to inmates and staff, and assists in the preparation of menus _SUPERVISION RECEIVED:_ Works under the direction of the Executive Chef and the Kitchen Supervisor _SUPERVISION EXCERCISED:_ Supervises large numbers of inmates in the preparation and serving of food and related tasks _DUTIES AND RESPONSIBILITIES:_ 1. Assists in the planning of menus and special diets; 2. Prepares and/or supervises the preparation of meals and special diets; 3. Assists the Kitchen Supervisor and Executive Chef in ordering food and equipment for the kitchen and dining areas; 4. Ensures the timely and orderly service of meals and proper nutritional diets; 5. Ensures that the kitchen, food storage, and dining areas are maintained in compliance with applicable health codes, regulations, and Department policies; 7.
