Job Description

Participates in the preparation service and cleaning activities of the Butcher Shop, including cutting, trimming, bone tying, and grinding meats such as beef, pork, poultry, and fish to prepare meat in cooking form. Estimates requirements, orders or requisitions meat supplies to maintain inventories, records quantity of meat received and issued to cooks, and keeps records of meat sales. Ensures that store rooms, fridges, deep freezers are kept clean and orderly; guarantees garbage bins are covered, emptied, and properly lined; maintains grooming and uniform standards; complies with Hotel Health & Safety & Hygiene Policy; and confirms that all meat items are covered properly. Informs the Butcher daily of relevant operational and personal matters. Familiarizes yourself with hotel fire, first aid, health & safety, security procedures and product knowledge.
